Catch Hospitality Opens Cafe Charmant, Its 4th NYC Concept in Two Years

Catch Hospitality Group opened Cafe Charmant, a 70-seat coastal brasserie, on September 15 in New York's West Village — the company's fourth standalone concept launch in just two years.
That pace matters. The group rolled out the Corner Store in 2024, followed by Eighty86 and Or'esh last year, and now Cafe Charmant. For a hospitality group best known for its flagship Catch brand, the cadence signals a deliberate shift toward building a portfolio of freestanding, chef-driven concepts rather than leaning on one marquee name.
Who's cooking, and what's on the menu?
Executive chef Jake Tyler Brodsky runs the kitchen. He's an Eleven Madison Park alum who also spent time at Palm Heights in the Cayman Islands, and both résumé lines show. Brodsky called Cafe Charmant a "sun-kissed interpretation of the classic French brasserie."
"The goal is a restaurant that feels effortless and transportive while still feeling right at home in downtown New York," he said.
The menu engineering is straightforward brasserie-plus-coast: raw bar items including oysters, diver scallop crudo and wild shrimp carpaccio open the meal, with starters like curry duck pastel, spicy moules gratin and leeks with stracciatella. Steak frites, chicken paillard and a 30-ounce côte de boeuf anchor the classic side, while razor clam pasta and a crispy red snapper sandwich carry the island influence.
The cocktail program was built with the kitchen, not apart from it. House-made ingredients and techniques like sous vide and fat washing back signatures including the Provençal Dirty Martini, Vanilla Garibaldi and Cucumber Sour — a pairing strategy that keeps beverage spend tied directly to the food menu.
What does this change for the group's footprint?
Rockwell Group, which also designed the Corner Store, handled the room: limewash walls, deep woods, leather upholstery, navy tones and maritime touches — a Riviera inflection aimed at downtown Manhattan diners.
Catch Hospitality partner Eugene Remm framed the opening as part of the group's evolution.
"We wanted to give chef Jake the opportunity to create something with his own point of view — a modern take on a simple, elegant European feel that is familiar yet unexpected," Remm said. He added that the project is unique for CHG but stays true to its core of great food, great service and a great vibe.
The bigger test comes next month. The Corner Store debuts November 9 at the Cosmopolitan in Las Vegas, the first expansion of the group's 2024 hit beyond New York. Rockwell Group designed it too, with an intimate storefront meant to read as a lived-in New York neighborhood spot rather than a casino restaurant.
The Las Vegas menu will carry the New York signatures — lobster and caviar rolls, a wagyu French dip, the Caesar salad with everything bagel croutons and cream cheese croquettes — plus exclusive items and an expanded selection of premium meats and hand-cut steaks from Rosewood Ranch. That protein-forward expansion is a clear play for the higher-check steak spending Las Vegas reliably generates.
With Cafe Charmant now open and a second market on the calendar for November, Catch Hospitality has moved from a New York operator with concepts to a multi-market group — and the Las Vegas debut will offer the first real read on how far this portfolio can travel.
