Flying Biscuit Café Signs Katy, Texas Lease for Seventh Houston-Area Café
Franchise partners Mario and Ifeoma Harper have signed a lease at 1660 S Mason Rd in Katy, Texas, with the café set for late November 2026 — the seventh Houston-area unit for the 44-unit brand.

Franchise partners Mario Harper and Ifeoma Harper signed the lease for their first Flying Biscuit café. Littwitz Investments represented the franchisees in the transaction. The Harpers cited Katy's growing, diverse neighborhoods and said they plan to build relationships with local community groups; the café will also offer full-service catering for team breakfasts, school events and family gatherings.
"We chose this location in Katy because it's a highly visible, convenient spot that's easy for families and neighbors to reach — making it simple for guests to drop in for breakfast, brunch and those 'just one more bite' moments in between," Mario Harper said in a statement. "We're most excited to serve the people who make Katy home, and the neighbors who love gathering around food and creating everyday traditions."
The Katy café will serve breakfast and lunch daily, with a menu spanning stuffed French toast, shrimp and grits, omelets, vegan scrambles, burgers and wraps. It will operate a full bar with brunch-forward cocktails — a format that builds brunch daypart traffic into a higher-margin beverage attach. Hiring information will be posted at flyingbiscuit.com.
The Atlanta-founded brand is building out Houston deliberately. Five Flying Biscuit cafés already operate across the Houston area, with two more Texas cafés in development. A sixth Houston-area café, in Magnolia, Texas, opens next, making Katy the seventh in the market once its doors open in November. Beyond Houston, a café in Abilene, Texas, is planned for the second quarter of 2027.
"Texas has moved fast for us, and Katy is a good example of why," said Andrew Scherzer, partner and director of franchise development for Flying Biscuit Franchising. "Mario Harper and Ifeoma Harper picked a site they can actually run well — visible, simple to get in and out of, right in the middle of where people already are. That kind of decision-making is what we look for in a partner, and it is why the Houston market keeps opening up for us."
The Katy lease lands in a busy stretch of expansion for the 44-unit brand, which now has 12 cafés in development. Owner-operator Chris Compton opened his second Flying Biscuit in downtown Knoxville, Tenn., on Sept. 12, 2026. John and Gisela Terranova are opening the brand's first Orlando-area café, in Kissimmee, Fla., in the coming weeks. In St. Charles, Mo., franchise partners Latrell Hayes, Kennon "Kip" Barber and Randy Barnes are targeting the fourth quarter of 2026 for the brand's first café in the St. Louis metro — and its first outside its core Southern footprint.
All of the recent and planned openings run through franchisees except Compton's Knoxville unit, which is owner-operated.
