Walk-On's Smaller Sports Bar Prototype Opens in Baton Rouge Early Next Year
Walk-On's first 3,500-4,500 sq. ft. next-generation sports bar, designed by Madrid's Livit, opens early next year at 8150 Perkins Road, Baton Rouge.

Walk-On's Sports Bistreaux will open its first streamlined-prototype restaurant early next year at 8150 Perkins Road in Baton Rouge, La. — the first physical test of a smaller-store strategy the chain first announced in August.
The company calls the format its "next-generation sports bar model." The new prototype shrinks the footprint to between 3,500 and 4,500 square feet, a clear break from the larger boxes the brand has built to date, and it is designed specifically to make those smaller stores work as a growth vehicle.
Walk-On's has now shared more detail on how the interior of the format is organized, drawing on the work of its design partner. Madrid-based restaurant design firm Livit designed the prototype, giving the Louisiana-born sports bar chain a European-designed template for a distinctly American category.
Why a smaller box?
For a sports bar concept, square footage is one of the biggest fixed costs in the unit economics. A 3,500- to 4,500-square-foot box reduces construction cost, real estate obligations, and the staffing required to run a shift, compared with the larger formats the brand has operated historically.
That math matters for expansion. Smaller prototypes typically allow a chain to enter markets and site types — infill locations, smaller trade areas, pad sites — where a full-size sports bar would not pencil.
The Baton Rouge opening carries symbolic weight beyond its size. Walk-On's was founded in Baton Rouge, and the first next-generation store will open in the brand's home market, where management can watch the format operate up close before rolling it further.
What does this change for operators?
The practical question for franchisees and competitors alike is whether a sports bar can hold its revenue model in a tighter space — fewer tables, a bar still large enough to anchor the concept, and a kitchen scaled to a reduced footprint. The Baton Rouge unit will be the first live answer.
The August announcement framed the prototype as a way to help the brand grow. This week's more detailed look at the store's inner workings moves the project from concept to execution, with a named site, a named designer, and an opening window.
What to watch
Three markers will define whether the prototype succeeds:
- Execution on the early-2025 opening timeline at 8150 Perkins Road.
- Whether the smaller box protects the sports bar experience Livit has designed around.
- How quickly Walk-On's commits to additional next-generation sites after the Baton Rouge test.
A successful debut would give Walk-On's a cheaper, faster-to-build growth tool and sharpen its position in the competitive sports bar segment. The first proof point arrives early next year in Baton Rouge.
