Snooze Eatery Names Amy Hom Chief Operating Officer
Snooze Eatery has named Amy Hom chief operating officer, putting a new hand on day-to-day operations at the breakfast-focused casual dining chain.
Snooze Eatery, the breakfast-and-lunch casual dining brand, has named Amy Hom its chief operating officer, according to an announcement reported by Fast Casual.
The COO appointment puts Hom in charge of the day-to-day operations machinery at a chain built on a deliberately narrow daypart: morning. Snooze has made its name on creative pancakes, brunch cocktails, and a design-forward dining room that skews younger than the classic diner crowd.
For a multi-unit operator of this type, the COO seat is the linchpin between the corporate office and the restaurants themselves. The role typically carries responsibility for unit-level execution: food and labor cost discipline, throughput during peak weekend brunch rushes, training, and the consistency that determines whether a guest at one location gets the same experience as a guest at another.
That last piece matters most at breakfast. Brunch is a demand spike business. The hours are short, the queues are long, and the margin for error in ticket times and table turns is thin. An operator that can't move guests through a two-hour weekend window leaves revenue on the table, no matter how strong the brand.
What does this change for Snooze?
In the near term, likely little that guests will notice. Leadership appointments at the COO level tend to show up first in the back of house and on the P&L — in labor scheduling, supply chain coordination, and how quickly new units reach their stride after opening.
The longer-term signal is about growth. A brand installing a seasoned operations chief is usually a brand preparing to scale, or at least tightening the machine so it can. Hom's mandate will be judged by the metrics operators care about: same-store performance, unit economics at new locations, and staffing stability in a segment still working through elevated labor costs.
The company did not disclose additional details of the appointment — including Hom's prior role, her start date, or the size of her portfolio — in the initial announcement.
Snooze's next moves — new market entries, menu evolution, or changes to its company-operated footprint — will offer the first read on how the new operating chief intends to shape the brand's trajectory.
