Hyatt Bets Big on Mexico With Three Park Hyatts and Luxury Push
Park Hyatt opens its first all-inclusive resort by end of 2026, part of a three-hotel Mexico buildout alongside new Unbound, Alila and Grand Hyatt additions across the Americas.

Park Hyatt will operate the world's first all-inclusive property under its brand flag by the end of 2026, part of a three-hotel Mexican buildout that Hyatt Hotels Corporation (NYSE: H) positions as the centerpiece of its luxury growth across the Americas.
The sequence started in December 2025, when Park Hyatt Cabo del Sol opened on the Baja California Sur coast as the brand's first hotel in Mexico. Park Hyatt Riviera Maya, on a secluded stretch of the Caribbean coastline, follows by the end of 2026 — and it breaks the brand's format. The resort plans entirely à la carte dining and personalized pre-arrival planning, replacing the buffet-and-schedule conventions of the all-inclusive model with discretionary, choice-driven service.
Park Hyatt Mexico City Polanco is expected to welcome its first guests in spring 2027. The 155-room-and-suite hotel sits on Campos Elíseos in Polanco, overlooking Chapultepec Park, with Mexican art, design and cuisine shaping the interiors and culinary program. Together, the three properties give Hyatt coverage of Mexico's Pacific coast, Caribbean shoreline and capital — and give travelers the option to pair an urban stay with time on either coast under one brand.
Tamara Lohan, Global Brand Leader – Luxury at Hyatt, framed the expansion as deliberate rather than volumetric: "I couldn't be more excited about our new luxury hotels – each individual, each thoughtful and gracefully designed with thought, taste and elegance." She added: "Our focus is to grow thoughtfully and give travelers more choice while ensuring each hotel has a clear point of view and highly personal service at its center."
Unbound Collection adds Isla Mujeres
The Unbound Collection by Hyatt, Hyatt's vehicle for independent-character properties, is growing on two fronts in the Americas. The Clayfield, a wine-country retreat in Niagara-on-the-Lake, Ontario, is open, drawing on the region's clay-rich soil and vineyards for its material palette.
On November 2, Impression Isla Mujeres joins the collection. The adults-only, all-inclusive resort brings suite-led accommodations and butler service into a portfolio that Hyatt keeps deliberately loose in brand architecture.
The collection also launches an experiences initiative this year — private culinary and wine events, behind-the-scenes access to local culture, artists and makers — designed around inventory guests cannot book elsewhere. The Georgian, Hotel La Compañía Casco Antiguo and Impression Isla Mujeres are among the first properties to carry the program, converting design, culinary heritage and history into bookable, high-touch product.
Alila's four-property footprint
The Alila brand in the Americas now spans four properties: Alila Ventana Big Sur, Alila Napa Valley, Alila Marea Beach Resort Encinitas and, since February 2026, Alila Mayakoba. The Riviera Maya resort occupies 60 acres of beach, lagoon and jungle within Mayakoba, with 182 guestrooms, suites and villas, six dining destinations and Alila Spa. Locally sourced materials, regional artisan collaborations and a wellbeing program built with local practitioners root the property in the Yucatán Peninsula.
Beginning October 1, all four Alila properties join Erewhon's Member Lifestyle Collective — a distribution play that puts the brand in front of the upscale grocer's wellbeing-focused membership. Erewhon members will get direct access to participating Alila hotels through the collective this fall.
Grand Hyatt follows the leisure demand
The luxury push extends downmarket within Hyatt's hierarchy. Grand Hyatt Grand Cayman, Grand Hyatt Cancun and Grand Hyatt Los Cabos all open in the fourth quarter of 2026, extending the brand into high-demand leisure destinations. The Cancún and Los Cabos resorts add all-inclusive formats to Grand Hyatt's Americas offering — a segment Hyatt has built out aggressively since acquiring the ALG-led Inclusive Collection.
The near-term calendar is dense: two more Park Hyatts in Mexico, three Grand Hyatts across Latin America and the Caribbean, one Unbound Collection conversion in November, and the Erewhon partnership live in October. How the all-inclusive Park Hyatt Riviera Maya performs against both conventional Park Hyatt economics and established luxury all-inclusive competitors will be the signal test of whether Hyatt can stretch the brand without diluting it.
