Sam Fox Exits FRC With $308M Sale Behind Him, Bets on Hotels
Sam Fox left FRC on Oct. 30, seven years after its $353M sale, to scale Author & Edit: independent luxury hotels with 75-cent room margins and owned dining.

Sam Fox worked his last day at Fox Restaurant Concepts on October 30, seven years after selling the company to The Cheesecake Factory for $353 million. The exit frees him to run Author & Edit Hospitality, his luxury hotel and independent restaurant group, full time.
The numbers frame the scale of what he's leaving. Fox opened nearly 200 restaurants over three decades and built more than 20 brands, including True Food Kitchen, The Henry, Flower Child and North Italia. Cheesecake Factory bought FRC in October 2019, when the group ran almost 50 restaurants across eight states. Since then FRC has grown to 13 concepts with more than 100 locations nationwide, plus 52 North Italia units.
"It's hard to sell your business and be partners with the people you sell your business to for this long," Fox said. He described the departure as a gradual, year-by-year transition rather than a timetable fixed at the sale. As the business grew, the company built a transition team, and Fox and ownership discussed his timing over the past year.
What does this change for his next act? Everything about where his capital and attention go. Fox founded Author & Edit Hospitality in 2021 with The Twelve Thirty Club, a multi-level supper club inspired by the Prohibition era, opened in partnership with Justin Timberlake in Nashville. He followed in December 2023 with his first hotel, The Global Ambassador in Phoenix, which earned a MICHELIN Key in its first year and every year since.
The hotel thesis is a direct answer to a broken model Fox says he lived through. Years ago he opened a restaurant inside a hotel where third-party operators ran everything from dining to valet and spa. "I looked around and everyone was working in different silos, and it was really draining and taxing on the guests and really not great for employees either," he recalled. "I said, 'This model is broken.'"
His fix is vertical control. "I'm not going to outsource that to a Marriott or a Hyatt or any of the other big companies," Fox said. "I was going to operate it as a truly independent hotel and own and operate everything within the four walls."
The economics cut against him, and he knows it. Fox estimates hotel rooms generate 70 to 75 cents of profit per revenue dollar, versus roughly 20 cents for restaurants — a gap that explains why most hoteliers outsource dining. He chose the labor-heavy path instead. "We made it hard on ourselves. We have more employees, less profit," he said. Then the restaurant discipline kicked in: "Restaurant people are scrappier than hotel people, and to get my hotel people to think like restaurateurs has been a challenge, but we've achieved that, and now the building is humming, and the margins are incredible."
The Global Ambassador stacks five owned dining venues under one roof:
- Théa Mediterranean Rooftop, overlooking Camelback Mountain
- Le Âme, a Parisian steakhouse and bistro
- Pink Dolphin, a poolside Mexican-Peruvian restaurant and bar
- Le Market, a French-inspired bakery and cafe
- Lobby Bar, a cocktail lounge with live weekend jazz
Design influences came from Montage Laguna Beach, where his family spent nearly 10 summers, and from long-established, family-owned European hotels in vacation destinations.
The pipeline is already public. Fox and Timberlake will bring a Twelve Thirty Club to Austin, Texas, and a Théa Mediterranean Rooftop to Dallas, both slated for 2027. Fox also hinted at replicating The Global Ambassador in other markets and developing a smaller "sibling" hotel brand in Phoenix — neither formally announced.
The name Author & Edit captures his operating philosophy: author a concept from scratch, then keep editing it based on guests and employees. "I think the magic happens in the editing," Fox said. He admits the degree of difficulty is underrated — development, financing structure, budgets, hiring, all "from zero scratch" — but says it feels like starting over with nearly 30 years of experience behind him, and he's betting the model ports to new markets.
