Daniel Humm, Nancy Silverton Anchor a Fall Wave of Independent Openings
Humm opens a 90-seat wood-fire concept Oct. 10; Silverton's steakhouse lands Oct. 15 in fire-hit Pacific Palisades. Independents push casual formats this fall.

Independent operators are rolling out their fall openings into a K-shaped economy that has favored them over chains, and this season's class is heavy on marquee names trading fine-dining credentials for higher-volume, more casual formats.
The most closely watched debut belongs to Daniel Humm of Eleven Madison Park, who opens an unnamed, more casual concept in New York's West Village on Oct. 10, with reservations already being accepted. Dmitri Magi, formerly chef de cuisine at Eleven Madison who helped the restaurant land a top spot on the World's 50 Best list in 2017 and is now managing partner of Daniel Humm Hospitality, will serve as executive chef.
The Financial Times reports the project is a deeply personal one for Humm. The room holds 90 seats around an open-plan kitchen built on wood fire. The menu returns to meat — a shift from Humm's vegan conversion at EMP — anchored by his mother's roasted chicken with Parmesan and brioche tucked under the skin. Vegetable-forward items include wood-fired cauliflower with tomato ragu, with shareable seafood platters, tomato focaccia and rosemary-lemon fries rounding out the menu. The Times predicts the room will become the neighborhood's power-lunch destination once lunch service begins.
Silverton Rebuilds in Pacific Palisades
More than a year after fire devastated the Pacific Palisades, Nancy Silverton delivers a signal of the Los Angeles neighborhood's recovery: Spacca Tutto, an Italian-American steakhouse opening Oct. 15 in the Palisades Village shopping center that reopened last month. The concept borrows from her existing Chi Spacca, including the crispy, cheesy Focaccia di Recco. Silverton's Mozza Restaurant Group operates Osteria Mozza, Pizzeria Mozza and more, and she is a partner in Max & Helen's with Phil Rosenthal. Silverton, inducted into the MenuMasters Hall of Fame in 2024, previously founded and sold La Brea Bakery and ran Campanile with the late Mark Peel.
Italian Expansion in Miami and New Orleans
In Miami, Nicola Siervo of KNR Restaurant Group — the operator behind Bang, Bar None, Joia, Quattro Gastronomia Italiana and Mokai — is partnering with House Kiki, the group behind Kiki on The River and Habibi, on Mercante. The Italian restaurant and piano bar on the Miami River aims to evoke the Italian Riviera when it opens later this year, with pastas, salads, seafood, an Italian wine list and craft cocktails. The economics are built for volume and events: 175 seats including a waterfront terrazza, private dining available dockside, and a 150-foot dock for guests arriving by yacht.
In New Orleans, James Beard Award-winning chef Justin Devillier and his wife Mia, of Devillier Hospitality Group, with business partner Joel Dondis, will open Daughter's Neighborhood Italian in the historic space previously held by Upperline. The 100-seat restaurant applies a whimsical, moody take on the red-sauce Italian-American family joint, with a dedicated bar program. Justin Devillier has run La Petite Grocery for roughly two decades. The menu draws on Mia's Sicilian heritage and focuses on executing familiar dishes at a higher level rather than reinventing them: fried mozzarella, spaghetti and meatballs, wood-fired lasagna with brisket sugo, chicken parm and saltimbocca.
New Concepts on the West Coast and in Chicago
H.wood Group, parent of Delilah and The Nice Guy, brings Little Luck to West Hollywood this fall, a Japanese concept taking over the space formerly occupied by its burlesque-themed bar Bootsy Bellows. Executive Chef Erik Idos, previously of Chino Manila and Izakaya Geronimo in the Philippines, will run the kitchen. Details remain scarce.
In San Francisco, Hi Neighbor Hospitality Group — operator of The Vault Steakhouse, Trestle and Mama Oakland — opened Sergeant Ma in late September on the waterfront overlooking Mission Creek. Executive Chef and partner Jason Halverson built the concept as a tribute to his mother, an Asian matriarch who emigrated from Vietnam to Kansas and taught herself to cook. The menu applies Asian flavors and techniques to California seasonal produce: steamed Manila clams with crispy pork belly, grilled octopus with a char siu-style glaze, and coriander-crusted duck breast.
In Chicago's Fulton Market district, chef Jimmy Papadopoulos has reunited with Bellemore co-owner Tim Anderson for Black Briar, which opened Sept. 26. Described as an American restaurant with the heart of a tavern, the kitchen is built around a coal-fired grill, and the pasta program runs on a 30-year-old sourdough starter named Jane Dough. Anderson's beverage program also uses the fire, with charred grapefruit, roasted sour cherries and burned honey as ingredients. The menu spans venison tartare with sweet potato chips, grilled lobster rice and beet panzanella. Papadopoulos framed the approach in a statement: "Cooking is very much like music. You've got the same notes; it's really about how you arrange them."
Tasting-Menu Debut in Greenville
In Greenville, South Carolina, the multi-concept Table 301 group — known for Soby's, The Lazy Goat, Nose Dive and Camp — is moving upmarket with Enlō, a 52-seat tasting-menu restaurant and the city's first dedicated to the format. Chef Nico Abello offers five- or eight-course seasonal menus with wines from lesser-known vineyards. The opening menu includes summer tomatoes with comte and arugula, Parisian gnocchi with sweet corn and mimolette, monkfish with eggplant and Thai basil, and lamb with huckleberry and salsify.
Collectively, the openings show independents leaning into recognizable formats — steakhouses, red-sauce Italian, tavern fare — priced and positioned to capture demand in markets from Miami's waterfront to Greenville's growing dining scene, with Humm's West Village debut on Oct. 10 likely to be the season's hardest reservation.
