Brad Wise expands The Wise Ox butcher-sandwich concept to Las Vegas

Trust Restaurant Group’s 15-restaurant portfolio includes an off-Strip Las Vegas Wise Ox, combining retail meat sales, chef-created sandwiches and volume-based procurement.

Trust Restaurant Group’s 15-restaurant portfolio stretches from its San Diego home base to Washington state and Las Vegas, with the newest Wise Ox just opened inside UnCommons. The restaurant sits off the Strip and outside the hotel zone, within a mixed-use development known as a culinary hub.

For the operator, Las Vegas adds a market for a format that combines prepared sandwiches with take-home meat sales. That combined restaurant and retail mix is the central expansion proposition.

What does The Wise Ox change for Las Vegas?

The Wise Ox is a butcher-shop and fast-casual hybrid built around overstuffed sandwiches. Shoppers can buy steaks and dry-aged ground beef to cook at home, or order chef-created sandwiches at the restaurant.

The format broadens the concept beyond sandwich orders alone and gives Trust two ways to sell meat: as a prepared meal and as food for home cooking. Sandwich examples include:

  • Smoked Bologna
  • Roast Beef with Havarti cheese and horseradish cream
  • Peppered Turkey with Chipotle aioli

At one off-Strip site, customers can therefore buy both chef-created sandwiches and meat for home cooking. That combination is the format’s practical distinction, giving Trust restaurant orders and take-home purchases through the same concept.

A shared meat platform, two concepts

Rare Society, a modern steakhouse, is Trust Restaurant Group’s flagship. The Wise Ox combines the group’s meat focus with butcher-shop retail and fast-casual sandwiches, creating a distinct operating format within the 15-restaurant portfolio.

Founder Brad Wise’s menu work starts with supplier quality and runs through dry-aging beef, choosing wood for live-fire cooking and developing signature menu items. The interview centers on how those choices help differentiate the Rare Society and Wise Ox menus. The sourcing discipline therefore operates as a shared platform beneath two distinct menus.

Volume buying is the economic engine

The clearest operating claim concerns procurement rather than sales growth. In Wise’s account, the group develops close relationships with meat suppliers and buys in volume, “passing value on to customers.”

That approach reaches two parts of the Wise Ox business: prepared food and retail meat. Meat costs shape the gross margin available on sandwiches and the price the shop can charge for steaks and dry-aged ground beef.

In operator terms, purchasing scale matters when it supports both a competitive menu price and acceptable restaurant margins. Neither result is quantified in the interview.

No purchase quantities, average checks, food-cost percentages, labor costs or restaurant margins are disclosed. The interview also does not identify how many of the 15 restaurants are company-operated or franchised.

So the procurement model is clear, but unit-level profitability remains unquantified. For another operator, the financial measures to watch are food cost, average check and labor share, none of which the interview supplies.

Expansion rests on procurement, not a disclosed rollout

The Las Vegas opening is the clearest expansion step in Wise’s story. He has discussed additional expansion plans for Trust Restaurant Group, but no further opening dates, target unit counts or market list appear in the material.

UnCommons is the concrete milestone: a new market, a mixed-use culinary hub and a format that can test both prepared and take-home sales. The wider portfolio already reaches Washington state, so Las Vegas extends a multi-state footprint rather than starting the group’s geographic expansion.

For other restaurant groups, the transferable mechanism is simple: pair a core ingredient category with close supplier relationships, volume purchasing and menu items that make sourcing part of the offer. The Wise Ox makes sourcing part of the format itself, rather than leaving it as a back-office specification.

The next test is whether Trust can preserve those supplier relationships, volume buying and customer value as it expands beyond the current 15-restaurant portfolio. Those factors will determine whether the Las Vegas opening becomes a repeatable model.
