Opera Bar reopens 6 November under Applejack with hyper-local menu

Applejack Hospitality reopens Sydney's Opera Bar on 6 November with a Luchetti Krelle redesign and a menu built on named producers from Bankstown, Auburn, Bondi and regional NSW.

Opera Bar reopens to the public on Friday 6 November, capping a year-long reset of the Sydney Opera House's harbourside dining under operator Applejack Hospitality with a full redesign and a new market kitchen format spanning four cuisines.

The reopening marks the second stage of Applejack's tenure, which began when the group was appointed to oversee the precinct's harbourside venues roughly a year ago. The all-day eatery Winnie's opened in July as the first move; Opera Bar is the larger, flagship piece.

What's on the menu?

Applejack Culinary Director Patrick Friesen and Opera Bar Precinct Executive Head Chef Daniel Cooper built the menu around Sydney's suburban food cultures. It combines Asian and Middle Eastern influences, a dedicated pizza kitchen, and modern Australian classics.

The sourcing strategy is the real story. Rather than a single supplier model, the kitchen has stitched together named producers from specific suburbs and regional NSW:

  • Pork spring rolls made by Bankstown's Banh Mi Bay Ngo
  • Italian mozzarella from Auburn's La Stella
  • Falafel from Bondi's Basta
  • Sydney rock oysters via Rock Oyster Depot
  • Hot sauce from The Fermentalists, used across the menu

"Sydney is the most delicious city on earth," Friesen said. "You can travel around the world just by moving through its suburbs, and that's what we wanted to capture at Opera Bar."

He framed the menu as a celebration of "the producers, makers and businesses doing incredible things in neighbourhoods across the city", while keeping the food "generous, approachable and exactly what you want to eat beside the harbour".

The drinks program goes NSW-first

Applejack Group Beverage Manager Matt Johnson and Opera Bar Precinct Beverage Manager James 'Rusty' Russell lead the drinks list, which pairs Australian producers with an NSW-led beer and wine selection.

The beer list pulls from local and regional breweries: Young Henrys, Stone & Wood, Hawke's, Mountain Culture, Yulli's and Heaps Normal. Wine focuses on Hunter Valley, Orange, Mudgee, Tumbarumba and Canberra District, with a curated range of Champagne and Provence rosé alongside.

The cocktail list leans on Australian ingredients and nostalgia. A Hugo Spritz is reworked with Papa Salt Coastal Gin, a frozen mango and coconut cocktail uses Sydney-made Red Mill Rum and nods to the Mango Weis Bar, and the Cheeky Lamington combines coconut tequila and white chocolate with a lamington from Sydney's Tokyo Lamington. A dedicated non-alcoholic cocktail collection sits beside zero-alcohol wine and beer.

"The drinks list has been designed with the same philosophy as the food – to celebrate the incredible producers we have here," Johnson said. "We've brought together Australian spirits, wines and beers alongside cocktails that feel fresh, fun and distinctly Opera Bar."

What does the redesign change?

Studio Luchetti Krelle, an award-winning Australian design firm, has carried out a comprehensive overhaul. The refresh keeps the Sydney Opera House's architectural character but replaces the venue's former blue nautical look with a deep green palette and a contemporary aesthetic.

Applejack Hospitality Co-Founder Ben Carroll said the brief was to honour both the venue's global recognition and its local ownership. "Opera Bar is one of Australia's most iconic venues. It's known by people all over the world, but it also belongs to the people who live here," he said. "We wanted to create something that honours both: a venue worthy of this extraordinary location that still feels unmistakably Sydney."

Live music continues as a cultural extension of the Opera House, curated nightly by Arts Matter.

With Winnie's already trading and Opera Bar now relaunched, Applejack has the precinct's core dining assets repositioned ahead of the summer season — and the 6 November reopening will be the first test of whether the local-sourcing pitch lands at scale.
