Nestlé USA's 2027 Forecast: Sour Sales Up 309%, Protein Gets a Second Job
Nestlé USA's 2027 forecast: sour sales up 309% since 2022, banana bread latte searches up 6,267%, and regional dishes scoring 30% higher satisfaction than generic ones.

Nestlé USA has published its 2027 Food and Beverage Trend Forecast, and the hardest number in it isn't about heat or protein — it's sour. Sales in the sour category have climbed 309% since 2022, and searches for "zesty foods" are up 130% year over year. That's the company's lead shift: after a decade of chasing hotter peppers, Americans are chasing brightness instead — citrus zip, herbaceous tang, yuzu kosho, calamansi, sumac and chile citrus.
The forecast carries unusual weight because of who's writing it. Nestlé brands sit in 98% of U.S. households, giving the company a direct window into American kitchens that it combines with consumer research, search behavior, menu tracking and retail sales data. The full outlook, authored by Linh Phillips, Director of Consumer Insights & Foresight at Nestlé USA, is available at nestleusa.com/stories.
"We track thousands of early signals across conversations every year, and only a handful become meaningful trends," Phillips said. "What's coming through clearly is that value has become personal. Consumers are defining what's 'worth it' on their own terms — whether that means more flavor, a specific benefit or an experience that feels made for them."
What does this change for operators and product teams?
Each of the five shifts carries a menu-engineering or sourcing implication, and Nestlé is already productizing them across its portfolio.
Zest replaces heat. The flavor runway isn't a hotter chili — it's acidity and liveliness. Nestlé's own tie-ins: Minor's Kitchen Lemon Garlic Aioli Sauce, Hot Pockets Snack Breaks Melty Nacho Beef, and Vital Pursuit Southwest Style Chicken Fajita Sandwich Melt. For operators, the sourcing shift means citrus, sumac and fermented pastes move from garnish to center of plate.
Protein stops being the whole pitch. Roughly 63% of U.S. consumers still actively seek more protein, per Mintel. What changes in 2027 is that "protein-maxxing" alone no longer differentiates — food has to deliver a second benefit. Searches pairing protein with probiotics are up 300% year over year, with collagen up 190% and with fiber up 150%. The second benefit doesn't have to be functional either: "protein comfort food" searches have hit breakout status. Nestlé's answers include Vital Pursuit Max Pro Cheese Lovers Pizza, Garden of Life Raw Organic Protein & Greens, and Vital Proteins Collagen & Protein Shake.
Fruit moves from tasting note to ordering reason. Social conversation around fruit-flavored coffee has surged more than 23% over the past year, and searches for "banana bread lattes" are up a staggering 6,267% year over year. Some 63% of Gen Z coffee drinkers say they prefer coffee with a lot of flavor. Matcha is running the same play, with fruit-forward versions reshaping a category projected to reach $7.3 billion by 2030. Coffee mate Coconut Crème and natural bliss Caramelized Banana Bread Creamer are Nestlé's moves here.
Specificity pays. Global cuisine has gone fully mainstream — nearly three in four Gen Z and Millennial consumers count an international dish among their comfort foods. That familiarity has moved the bar from country to what Nestlé calls "zip code": 66% of consumers are interested in exploring regional variations within international cuisines, and the payoff is measurable. Regional Mexican preparations report 30% higher customer satisfaction scores than generic ones. Menu language matters: "Sicilian recipe" on a California Pizza Kitchen thin crust, Maggi Indian Classic Masala Noodles, Minor's Kitchen Creamy Korean BBQ Sauce.
The extras get built in. Nearly three-quarters of U.S. consumers say small extras and special touches make an experience feel more worth the cost, and nearly half report hunting for new foods and flavors most or all of the time. Shoppers are paying a premium for presentation, bold flavor and complex texture — think DiGiorno Premium Pepperoni Wood Fired Style Crust Pizza and Toll House Remix Brown Butter Chocolate Chip cookie dough.
The through line across all five trends, per the company: consumers are more selective than ever, and every bite and sip has to feel worthwhile.
"The next chapter of food and beverage will be shaped by consumers who expect more from every choice they make," Phillips said. "At Nestlé, we're listening closely to those evolving expectations and translating them into what comes next — delivering more value in every bite, every sip and every experience."
Expect the forecast to show up quickly on shelves and menus. Nestlé USA, part of Vevey, Switzerland-based Nestlé S.A. — the world's largest food and beverage company — has already translated each trend into named products, a signal that these five shifts will define product development through 2027.
