Nestlé USA's 2027 trend forecast flags "zestier moments" and "juicier coffees" — signals that ripple through supplier pipelines and operator cost of goods.

Nestlé USA has released a food and beverage trend forecast looking ahead to 2027, and two of its headline calls are already legible on menus today: what the company calls "zestier moments" and "juicier coffees."

The forecast, unveiled by the U.S. arm of the Swiss food giant, sketches where the company expects American palates — and, by extension, product pipelines — to move over the next several years. For restaurant and foodservice operators, the value isn't in the flavor poetry. It's in what a company of Nestlé's sourcing scale and R&D budget chooses to bet on.

Why a 2027 Forecast Matters Now

Trend forecasts from major CPG players function as advance notice for supply chains. When Nestlé signals a category, distributors, ingredient suppliers and menu developers typically follow, because the company's volume commitments can move availability and pricing for everyone downstream.

Two named directions stand out:

  • Zestier moments. The phrasing points to citrus and acid-forward flavor platforms — a continuation of the sour, fermented and botanical notes that have been climbing menu penetration across fast casual and full service.
  • Juicier coffees. The descriptor suggests fruitier coffee profiles, a shift that touches sourcing (lighter roasts, specific origins, processing methods) rather than roasting alone.

For operators, the practical question is straightforward: what does this change for sourcing and menu engineering? If the forecast holds, expect suppliers to push more fruit-forward coffee SKUs and citrus-driven ingredients into foodservice channels through 2026 and 2027.

The Sourcing and Pricing Angle

Fruit-forward coffee is a sourcing story before it's a taste story. Juicier cup profiles typically require specific origins and processing techniques, which carry different cost structures than commodity blends. Operators building beverage programs around these notes will feel it in cost of goods long before guests articulate a preference.

The same logic applies to zest. Citrus and acid platforms are comparatively cheap to execute — a squeeze, a zest, a vinegar-based finish — which is partly why they've spread so quickly. They deliver perceived freshness and complexity at low ingredient cost, a combination menu engineers rarely ignore.

What Comes Next

Nestlé hasn't laid out the full forecast detail in the initial announcement, so expect follow-on releases breaking down additional trend categories. Operators who track these calls early get a runway: time to test items, negotiate supply and price new SKUs before the trend reaches saturation.
