Chipotle Brings Back Smoked Brisket Nov. 5 After 4% Transaction Lift
Chipotle's Mesquite-Smoked Brisket returns Nov. 5 in the U.S. and Canada after driving a 4% transaction lift and higher checks during its 2024 limited run.

Chipotle will bring back its Mesquite-Smoked Brisket in the U.S. and Canada for a limited time starting Nov. 5, banking on a protein that delivered a 4% transaction lift the last time it ran.
The brisket first appeared in September 2021 and sold out ahead of schedule. When it returned in September 2024, it drove that 4% transaction increase plus higher checks during the quarter it was available. Executives said the launch beat expectations.
Why Chipotle keeps going back to this protein
The economics are the story here. A 4% transaction lift on a limited-time offer is a strong result for a chain of Chipotle's scale, especially one where traffic has been the industry's scarcest metric. The protein also pulled double duty: it moved existing customers up to a higher-priced item and brought new ones through the door.
Chief Financial Officer Adam Rymer laid out the mechanics on the fourth-quarter 2024 earnings call in February 2025. "We were very, very excited about the performance. It hit really high in terms of transactions and those that are switching from all proteins," he said. "We're happy with the fact that a lot of our existing customers switched over to brisket. It drove a lot of new customers to the brand, and it sustained really nicely."
That last word matters most. Limited-time offers often spike and fade within weeks. Rymer's claim that brisket "sustained" suggests the item earned its margin through a full quarter, not just a launch burst.
What does the supply chain require?
The sourcing bar is narrow. Chipotle says only about 5% of U.S. beef meets its animal welfare and quality standards. Cattle must be raised on a strictly vegetarian diet, without added growth hormones or routine antibiotics, with traceability back to the ranch of origin. That constraint is a real cost lever — a protein that only 1 in 20 U.S. cattle qualifies for can't be sourced cheaply, which helps explain the higher checks it produced in 2024.
Stephanie Perdue, senior vice president of brand marketing, tied the item to the company's "Food with Integrity" standards. "You can taste that commitment in every bite. Bringing it back in the heart of football season gives fans one more reason to make Chipotle part of their game-day lineup," she said in a statement.
Menu engineering, in the kitchen and on the line
The prep model is built for consistency in high-volume units. The beef is seasoned with spices including smoked serrano and chipotle chile peppers, then smoked over mesquite wood. In restaurants, team members sear it on the plancha, finish it with spices, toss it in a savory sauce made with smoky chile peppers, and hand-chop it in small batches throughout the day.
Nevielle Panthaky, senior vice president of culinary, said the spice blend and low-and-slow smoking give the brisket its character, "while the plancha sear and savory-tangy sauce create a tender bite with a little kick that's uniquely Chipotle."
Marketing and the delivery play
To support the return, Chipotle invited superfans into its kitchens to see the preparation firsthand. The group includes food creators Max Greb (Max the Meat Guy) and Newton Nguyen (Newt), plus reality star and longtime fan Carl Schmidt. The creative, developed with agency partner KIDS, extends the 100 Creators campaign that launched in August, following fans as they work alongside team members and film the experience themselves.
The pricing hook is digital-only: $0 delivery fees on Smoked Brisket orders placed through the Chipotle app, Chipotle.com, and Chipotle.ca from Nov. 5 through Nov. 18. That pushes orders into Chipotle's own channels rather than third-party platforms, where delivery fees and commissions eat into margin.
The two-week free-delivery window and the football-season framing signal a deliberate push for volume early in the run. If the brisket repeats anything close to its 2024 performance, Chipotle has a proven traffic driver heading into its most important quarter.
