Chili's Seventh Big Crispy Is a Chicken Parm With Fried Mozzarella
Chili's rolls out its seventh Big Crispy, a Chicken Parm built on Fried Mozz planks, with an Oct. 13 debut in Florence, Rome and Venice ahead of an Oct. 20 hidden-menu national launch.

Chili's chicken sandwich orders have risen 175% since the Big Crispy lineup launched in April. The Brinker International brand now has seven variations, and number seven arrives Oct. 20 nationwide.
The Chicken Parm Big Crispy swaps standard melted cheese for Chili's Fried Mozz planks. The build stacks crispy fried chicken and fried mozzarella over marinara, served with fries, white cheddar mac and cheese, and sides of marinara and house-made ranch. It is a direct menu-engineering play: Chili's is attaching two proven platforms rather than inventing a new one.
How is Chili's staging the rollout?
Three cities named for Italian destinations get the sandwich first, on Oct. 13. Florence, Kentucky; Rome, Georgia; and Venice, Florida will carry it a full week ahead of the national launch. The chain calls this a nod to the dish's Italian-American roots. It is also, plainly, a week of free local press.
George Felix, Brinker's chief marketing officer and executive vice president, framed the launch as building on established guest preferences. "We've loved seeing how guests responded to the Big Crispy, and it got us thinking about how we could build on that with flavors we know they already love,” Felix said in a statement. He added a verdict of sorts: “You won't find a chicken parm with a better cheese pull than this."
What does the Big Crispy line replace?
Chili's introduced the Big Crispy in April to compete directly with quick-service chicken sandwiches, including Popeyes. That is an unusual posture for a casual diner: a sit-down chain pricing and positioning itself against drive-thru incumbents. The strategy has apparently worked, per the company's own 175% figure on chicken sandwich orders.
The lineup now includes:
- Original Big Crispy
- Deluxe (bacon and Swiss)
- Spicy
- Nashville Hot
- Honey Chipotle
- Buffalo
- Chicken Parm Big Crispy
Each variant reuses the same fried chicken platform with different sauces and toppings, which keeps cost of goods manageable while extending menu breadth on paper.
What happens after Oct. 20?
The sandwich will not appear on printed menus nationwide. Customers outside the three Italian-named cities must ask for it by name through Chili's semi-secret menu. Hidden-menu mechanics cost nothing to implement and reward the chain's most engaged customers with a sense of insider access.
The marketing campaign adds Nicole “Snooki” Polizzi of “Jersey Shore” fame, who filmed a tourism video in Florence, Kentucky promoting the sandwich. A limited-time Chicken Parm Big Crispy t-shirt rounds out the campaign through Chili's online merch shop.
The launch continues a pattern for Brinker: take a winning protein platform, iterate toppings cheaply, and market the iteration loudly. Expect an eighth variation if the cheese-pull economics hold.
