Broken Yolk Cafe Hires Domino's, Steak 'n Shake Veteran to Lead Growth

Broken Yolk Cafe operates 42 locations and has just hired the executive it says will double that count. The breakfast-and-brunch chain named Bodine Berger Director of Franchise Development, adding him to a franchise sales team that has tripled in size over the last 12 months.

Berger arrives from development roles at Domino's Pizza and Steak 'n Shake. Before those posts, he spent years building the footprint of Eggs Up Grill, another breakfast-segment franchisor. His new mandate covers a national search for franchise candidates and support for what the company calls coast-to-coast growth with new partners.

What is the chain actually claiming?

The headline promise is a doubling of the system within three to five years. Berger made the case himself.

"This brand has spent decades honing its people-first culture, developing an elevated and inclusive cafe experience, and, as a result, its category-leading AUV in the breakfast and brunch space," Berger said. "I can say from firsthand experience in the breakfast segment, Broken Yolk Cafe is primed to double in size over the next several years, as the immense whitespace that exists for the brand throughout the country continues to attract new partners wanting to explore the two-daypart model."

Note what the statement lacks. No unit-count target is attached to the doubling claim, and the chain did not disclose the AUV figure behind the words "category-leading." Franchise announcements routinely assert category leadership without publishing the supporting number. This one follows that pattern.

Which markets are on the list?

The system has grown into Arizona, California, Idaho, Nevada and Texas in recent years. Next month the brand makes its Midwest debut, after signing a multi-unit agreement earlier this year for Lafayette, Indiana, that will add two cafes.

The priority territories are:

  • Boise
  • Dallas
  • Indianapolis
  • Northern California
  • Phoenix

All are described as emerging-market territories. The company did not say how many commitments, if any, are already signed in each.

What does the CEO say about pace?

CEO John Gelastopoulos framed the hire as an accelerator, not a change in strategy.

"With franchise development, our focus has always been on quality over quantity," Gelastopoulos said. "While Bodine's addition to the team won't alter that approach, his experience is sure to accelerate our expansion into new markets and communities nationwide."

The two statements sit in tension. A chain can pursue quality signings or it can double in size on a three-to-five-year clock; doing both at once is harder than announcing both.

What is the chain offering new operators?

The economics are explicit. Broken Yolk Cafe is seeking experienced operators and will grant a 2.5% royalty reduction for years one and two on all stores under an area development agreement signed before March 31, 2027.

That is a front-loaded incentive. It lowers early-year costs for the franchisee and gives the franchisor signed commitments before the deadline; it says nothing about unit-level performance after the discount expires.

The doubling claim now has an owner, a deadline window and a sales incentive behind it. Whether the 42-unit base becomes 84 will show in the pipeline Berger signs, not in the announcement that hired him.
