Winnow Launches Foresight, AI Forecasting Built With Hilton Chefs
Winnow Foresight, an AI forecasting app built with Hilton chefs, cut leftovers up to 69% in EMEA pilots and is now sold standalone for focused-service hotels.
Winnow has launched Winnow Foresight, a mobile-first, AI-powered production forecasting tool that predicts kitchen demand at the dish level before service begins. Pilots across 13 Hilton hotels in Europe, the Middle East and Africa show cuts in overproduction of up to 69% by weight within six months.
The web app, developed with Hilton chefs, targets focused-service hotels and properties with lighter food and beverage operations — a segment that has historically had less access to advanced food waste technology than full-service properties. Hilton runs more than 5,000 focused-service hotels globally across brands including Hampton by Hilton, Tru by Hilton and Hilton Garden Inn.
The economics are concrete. Hampton by Hilton Budapest cut the weight of leftovers by 69% in six months, including a 64% reduction in leftover croissants, while lifting breakfast satisfaction by 4% and reducing cost per cover by 10%. Hilton London Croydon cut leftovers by 52% within five months — sausage down 57%, scrambled eggs down 48% — freeing chefs to focus on food quality rather than surplus management. Hilton Frankfurt Airport achieved a 66% reduction in overproduction weight and a 5% saving on food costs.
The shift is structural: Foresight replaces guesswork in production planning with forecasts built from occupancy numbers and each site's own history of what was served and left over. Winnow says the forecasts are twice as accurate as a chef's own instinct and operate at the level of individual dishes rather than total covers. After service, chefs record leftovers via "Snap & Go" — a photo whose weight the AI estimates automatically, with no manual weighing. That result feeds back into the model, so each successive forecast is calibrated against the last.
Daily use takes 10 to 15 minutes: roughly five to check the production plan, ten to log leftovers. The app runs on any mobile device with no extra hardware, which lowers the adoption barrier for leaner kitchen teams.

Winnow and Hilton have partnered since 2017. The company's flagship measurement system, Winnow Vision — AI-powered cameras and scales that show what is being thrown away — is installed in more than 220 Hilton hotels worldwide, together preventing more than 5,900 tons of food waste, avoiding 7.8 million wasted meals and 13,000 tonnes of CO2 equivalent emissions.
Foresight extends that partnership from measurement into production planning. The product is sold standalone for focused-service hotels and as an add-on for kitchens already running Winnow Vision.
The financial case rests on overproduction's share of kitchen cost. Winnow's own data puts it bluntly: up to 20% of everything a commercial kitchen buys ends up thrown away, hitting food cost, labor and disposal spend simultaneously. Across Winnow's platform of 3,500-plus kitchens in nearly 100 countries — clients include Marriott, Accor and IKEA alongside Hilton — customers avoid 122,000 tonnes of CO2-equivalent emissions annually, and the company says its technology saves the industry over $100 million per year in food costs.
Foresight is live now in approximately 13 Hilton properties across EMEA, with Hilton evaluating pilot results ahead of a potential wider rollout across its focused-service estate.
