Hudson House to Open Two More Houston-Area Restaurants by 2027
Vandelay Companies will open Hudson House locations in Katy and Memorial City by mid-2027, expanding the East Coast-inspired concept to four Houston-area restaurants.
Vandelay Companies will open two more Hudson House locations in the Houston area: one in Katy at LaCenterra at Cinco Ranch, slated for early 2027, and one in Memorial City's Greenside development, targeted for Spring/Summer 2027.
The Katy restaurant at 2643 Commercial Center Blvd will span 5,600 square feet. The Memorial City unit at 1085 Gessner Rd, Suite 290 will cover 6,000 square feet. Both will carry Hudson House's signature buildout: warm leather booths, a large wraparound bar, a sit-down raw bar and an outdoor patio.
The expansion extends the growth of one of Vandelay's most established concepts. Hunter Pond, founder, chairman and CEO of Vandelay Companies, opened the original Hudson House in 2017. Since entering the Houston market with its first area location in 2023, the brand has added a second, and both have performed strongly enough to justify two more units.
"Since opening our first Houston-area Hudson House in 2023, we've seen a tremendous response from guests across the market," Pond said. "The success of our two existing Houston-area locations has continued to reinforce what a strong fit Hudson House is for the market, and with two more locations on the way, we look forward to bringing the experience to even more neighborhoods across the area."
The East Coast-inspired concept anchors its menu in a seafood program built on sourcing: East Coast oysters flown in daily, a dedicated raw bar and a sushi menu that ranges from the Sunset Roll — spicy tuna, cucumber and avocado topped with salmon with lemon and ginger vinaigrette — to the riceless Signature Roll with salmon, tuna, crab, avocado, tempura flake and spicy ponzu. The Pressed Ahi Tuna Roll pairs tuna sashimi with spicy tuna, avocado, spicy mayo, eel sauce and truffle oil. Spicy Tuna Crispy Rice rounds out the offerings with chili mayo and eel sauce.
Beyond seafood, the menu engineers broad daypart coverage with items that travel across lunch, brunch and dinner service: Hudson's Avocado Dip, a whipped avocado, green onion and herb dip served with ranch chips; The Cheeseburger, built on thin patties with American cheese, pickles and a signature house sauce; Chicken Parm with creamy tomato pasta and Reggiano; and the Hudson Salad, combining popcorn chicken, avocado, cherry tomato, bacon, sharp cheddar and green goddess dressing. A celebrated happy hour adds another traffic driver to the mix.
The beverage program leans on a proprietary pour: the "World's Coldest Martini," made with Grey Goose vodka served on tap and chilled to 10 degrees. Variations include The Classic, Bleu & Gold — vodka, olive juice, bleu cheese salt and housemade bleu cheese olives — plus The Lemon Drop finished with limoncello foam and The Espresso with vodka, espresso, Kahlúa and Baileys. A Frozen Bellini, Strawberry Spritz, Spicy Mexican and a classic Manhattan fill out the list.
Vandelay's approach to expansion relies on identifying strong neighborhoods and investing in each restaurant for the long term, building concepts designed to become permanent parts of their communities. Hudson House, which has grown from a single neighborhood restaurant into a defining concept within the Vandelay portfolio, now serves as the vehicle for that strategy across Texas and beyond.
With four Houston-area locations set by mid-2027, the brand is positioning itself as a lasting player in one of the country's most competitive full-service dining markets.
