Beverages Dominate Chain Menu Innovation as Starbucks Launches Aeroccan

Starbucks launched its air-whipped Aeroccano line while Jimmy John's tests pickle buckets at 26 locations, as beverages drive chain menu innovation on margins alone.

Starbucks rolled out a major new beverage line this week, the air-whipped Aeroccano, while Jimmy John's tests giant buckets of sweet-and-spicy pickle bits at 26 select locations nationwide. The two moves anchor a menu cycle in which drinks, not food, carry most of the innovation across national chains.

The pattern is economic, not aesthetic. Beverages carry high margins, low food cost and minimal kitchen labor, which makes them the cheapest way for operators to test flavors. They are also affordable for customers and travel well on social media. A drink is a low-commitment purchase. A failed beverage line costs far less than a failed food platform.

Who is launching what?

The beverage pipeline this week is unusually wide:

  • Starbucks: the air-whipped Aeroccano, a full new line rather than a single item
  • Good Times: cold brew added to the menu
  • Hat Creek Burger Company: margaritas as a permanent offering, not a limited-time promotion
  • Uno Pizzeria & Grill: dirty sodas
  • Savvy Sliders: an energy drink plus an energy shake, a pairing that may constitute an entirely new category
  • El Pollo Loco: cold brew mixed with horchata
  • Ellianos Coffee: seasonal beverages

Halloween drives another cluster. Mellow Mushroom has one themed drink. Burtons Grill & Bar has three. Buffalo Wild Wings and Paris Baguette fold cocktails into broader Halloween lineups rather than isolating them as beverage plays.

What does the food side offer?

Firehouse Subs is skipping Halloween entirely and returning its annual Thanksgiving Turkey Sub, a calendar play that arrives weeks before the holiday itself. The Melting Pot leans into a broader fall-themed seasonal menu.

Limited-time collaborations continue. Sweetgreen features Ayoh! Dill Pickle Mayo from cookbook author and media personality Molly Baz in a limited-time lineup. The pickle theme extends to Jimmy John's bucket test, suggesting dill remains a live flavor across segments.

Where is the pricing story?

Popeyes added a honey chicken biscuit. Starbird built a honey-chili-crisp lineup. Shake Shack brought back its truffle menu, a recurring premium platform. Tijuana Flats returned its cheeseburger tacos, now paired with a cheeseburger burrito and loaded fries, extending one validated item into a multi-SKU platform.

Velvet Taco's Weekly Taco Feature takes its inspiration from a jalapeño popper, continuing the chain's rotating single-item format.

The beverage emphasis should hold. Drinks deliver menu news without the inventory risk of new proteins or produce, and the Savvy Sliders energy-shake test signals operators will keep probing hybrid categories as energy drinks move further into foodservice.
