Co-founder Mike Russell framed the Bondi opening as a long-anticipated second step into the city. "We've had so many people asking us when we'd open a second bakery in Sydney, so it feels really good to finally be able to say Bondi," Russell said. "It's a neighbourhood with so much energy and such a strong sense of community, and we wanted to bring something that fits into people's everyday routine here – good bread, made properly, that people can grab on their way to the beach or back home."
How large is the Baker Bleu network now?
The Bondi site brings the chain to six stores. Four operate in Melbourne; Double Bay, which opened in 2022, is the only other Sydney location. Russell confirmed the group is mapping two more Sydney stores for next year, on the lower North Shore and in the Inner West. Leases and exact addresses for those sites have not been disclosed.
What will the Bondi menu carry?
The store will replicate the full Baker Bleu line-up rather than test a beach-specific menu. Confirmed products include:
- Signature loaves and "dark crust" country wheels
- Bagels and croissants
- Sandwiches
- Soft serve
- Coffee from Melbourne roaster Market Lane
Who designed the space?
Baker Bleu partnered with IF Architecture on the fit-out. The design leans on stainless-steel accents, a terrazzo floor poured with recycled aggregates, and outdoor seating. The company has not released square-metre or seating counts.
What does the rollout say about Baker Bleu's Sydney model?
The brand is doubling down on format consistency. The Bondi store will run the same product line as Double Bay and the four Melbourne sites, and the design language — stainless benching, terrazzo floors, outdoor seating — tracks the existing houses. By carrying Market Lane coffee into Bondi, the chain extends a Melbourne supply relationship into its second Sydney site.
The company has not released unit economics for the new store, including expected daily covers or average check. Russell's framing of the bakery as a daily-grab concept — "good bread, made properly, that people can grab" — positions the model around high-frequency takeaway staples rather than sit-down dining.
An official December opening date has not been announced. With Bondi adding a second Sydney site and two more in the pipeline for next year, the chain's Sydney footprint is set to grow to four stores.
